I’ve actually never been a huge fan of chicken pot pie. I didn’t grow up loving the frozen pot pies or loving my mom’s made from scratch chicken pot pie. So, I was absolutely surprised to find that I loved this recipe.

I love that it’s so easy, using premade ingredients, for those busy weeknights. AND it’s gluten free. Easy and gluten free usually don’t go hand in hand. Now, of course you can choose to make your own chicken and make your own biscuits. You can make any variations that suit your family best. I just love making this when we have left over rotisserie chicken on hand because it’s already seasoned really well and you don’t have to add any additional seasonings to this recipe.

Ingredients to Make The Easiest Gluten Free Cheddar Bay Chicken Pot Pie

  • Gluten free Rotisserie chicken or chicken breasts, chopped or shredded (I typically use Walmart’s traditional rotisserie chicken – it does not state gluten free on the package but it does not have any gluten containing ingredients and I have not had any issues or gotten sick with this one)
  • Frozen mixed veggies (canned or fresh could be used as well)
  • Gluten free cream of chicken soup
  • Box of Red Lobster Cheddar Bay Biscuit mix
  • Cheddar cheese (optional)
  • Butter
  • Water

Variations: you are welcome to make your own chicken, cream of chicken soup, homemade biscuits, or use fresh veggies. The key word in this recipe is “easy” and I love that you can throw all this together in such a short amount of time without having to add seasonings or extra fresh veggies. I usually plan to make this recipe along with another meal such as chicken salad, using one rotisserie chicken.

The Easiest Gluten Free Cheddar Bay Chicken Pot Pie

This Gluten Free Chicken Pot Pie recipe is so easy for those busy weeknights, using mostly premade ingredients!

Equipment

  • 1 round 9" pie baking dish
  • 1 large cooking pot

Ingredients
  

Biscuit mix ingredients

  • 1 cup cold water
  • ½ cup shredded sharp cheddar cheese
  • 1 box Gluten Free Red Lobster Cheddar Bay Biscuit Mix
  • ¼ cup butter

Pot Pie Ingredients

  • 3 cups traditional rotisserie chicken, shredded (confirm gluten free ingredients on the one you choose)
  • 2 cups mixed frozen vegetables
  • 2 cans gluten free cream of chicken soup

Instructions
 

  • Preheat oven to 425°. Spray baking dish with nonstick cooking spray.
  • Add the 3 cups traditional rotisserie chicken, shredded, 2 cups mixed frozen vegetables, and 2 cans gluten free cream of chicken soup into a large pot. Cook on medium heat until heated through, about 5 minutes.
  • While chicken mixture is heating, stir together 1 cup cold water, ½ cup shredded sharp cheddar cheese, 1 box Gluten Free Red Lobster Cheddar Bay Biscuit Mix. Don't overmix. You can use a utensil to chop up the mix to make it crumbly. Save garlic herb blend packet for after baking.
  • Pour chicken mixture into 9" baking dish. Scoop spoonfuls of biscuit mix on top of the pot pie mixture, covering the top.
  • Place dish in oven and bake for 20-22 minutes or until biscuits are golden brown. You will need to check biscuits to make sure all the dough is fully baked. While baking, melt ¼ cup butter and add garlic herb blend packet from biscuit mix box and stir until blended.
  • Take the dish out of the oven once the biscuits are fully baked and spoon or brush the garlic butter mix onto the top of the baked biscuits.
  • Let the dish rest for approximately 15 minutes and then serve.

Notes

You can make this recipe in other larger size dishes. Cooking time will vary and if made in a larger dish, the pie just won’t be as thick. Check the biscuit dough for doneness by pushing open a piece to ensure it is baked through.
You can use your own freshly made chicken breast. I like using rotisserie chicken because it’s easy to use the leftovers from it and it already has delicious seasonings. Always check the label of the rotisserie chicken you choose. Some have gluten containing seasonings. I purchase the traditional one from Walmart and haven’t had any issues.
If using your own chicken, I would add garlic, salt, and pepper to the chicken mixture.
