This One Pan Cheesy Taco Rice Skillet tastes like a delicious taco bowl without the added calories. It has great flavor and you could do lots of different things with it depending on what you are in the mood for. Taco salad, tacos, taco bowl, burritos, quesadillas, or with chips! And, as always, this recipe is gluten free!

This recipe is high protein and lower in fat and carbs than most rice skillet recipes. To lower the fat and carb count, I subbed half the rice for cauliflower rice and used fat free cheese. It does still have some healthy carbs (it is not low carb/keto) but I used cauliflower rice so that it is more macro friendly. One serving of this recipe, has approximately 320 calories, 8 grams of fat, 26 grams of carbs, and 35 grams of protein.

Ingredients

  • Onion
  • Bell Pepper
  • Olive Oil
  • Ground beef or you could sub turkey
  • White rice or you could use brown
  • Cauliflower Rice – you could also do all cauliflower rice to reduce carbs
  • Salsa. I used Sam’s club fresh salsa. We also like Costco’s fresh salsa.
  • Shredded cheddar cheese. I used fat free to reduce fat.
  • Taco seasoning. I made my own but you can use a packet as well.
    • When eating this recipe with chips, the salt level was perfect for us. Without the chips, you may add additional salt if you like your recipes on the saltier side.
  • Toppings: sour cream, additional salsa and shredded cheese, avocado, cilantro, jalapeno. You could also add beans as a side.

Substitutions:
If you don’t have salsa, you can use a can of Rotel.
Taco seasoning can be homemade.
Ground beef can be subbed for any meat. Even shredded chicken would go well in this recipe.

How to Make One Pan Cheesy Taco Rice Skillet

I only used one pan to make this entire dish, not including the rice. I made my rice the night before so I wouldn’t have to prep it before making this dish. You could even use all cauliflower rice so you don’t have to mess with making rice. I like the texture of rice in this dish, so I did a combination.

Ingredients
  

  • 1 cup diced onion
  • 1 medium bell pepper, chopped
  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 cup cooked rice I cook mine the day before so it's one less step
  • 1 cup cauliflower rice
  • 1 cup salsa
  • 1 cup cheddar or Colby jack cheese I used fat free

DIY Taco Seasoning or you can use a packet

  • 1 tbsp chili powder
  • 1/2 tbsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1 tsp pepper

Instructions
 

  • Add the 1 tbsp olive oil to a large skillet and heat over medium-high heat. Add 1 cup diced onion, and 1 medium bell pepper, chopped. Saute until soft.
  • Add 1 lb lean ground beef to skillet and cook until brown.
  • Add 1 tbsp chili powder, 1/2 tbsp ground cumin, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp oregano, 1 tsp paprika, 1/2 tsp salt, 1 tsp pepper (or 1 packet taco seasoning). Add 1 cup cooked rice, 1 cup cauliflower rice, 1 cup salsa. Mix all together and simmer on low heat for at least 10 minutes, stirring occasionally.
  • Sprinkle the 1 cup cheddar or Colby jack cheese on top.
  • Serve with your choice of toppings. Perfect for taco bowls, burritos, tacos, taco salad, and more!
