1cupcheddar or Colby jack cheeseI used fat free
DIY Taco Seasoning or you can use a packet
1tbspchili powder
1/2tbspground cumin
1/2tsponion powder
1/2tspgarlic powder
1/2tsporegano
1tsppaprika
1/2tspsalt
1tsppepper
Instructions
Add the 1 tbsp olive oil to a large skillet and heat over medium-high heat. Add 1 cup diced onion, and 1 medium bell pepper, chopped. Saute until soft.
Add 1 lb lean ground beef to skillet and cook until brown.
Add 1 tbsp chili powder, 1/2 tbsp ground cumin, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp oregano, 1 tsp paprika, 1/2 tsp salt, 1 tsp pepper (or 1 packet taco seasoning). Add 1 cup cooked rice, 1 cup cauliflower rice, 1 cup salsa. Mix all together and simmer on low heat for at least 10 minutes, stirring occasionally.
Sprinkle the 1 cup cheddar or Colby jack cheese on top.
Serve with your choice of toppings. Perfect for taco bowls, burritos, tacos, taco salad, and more!
