The Gluten Free Big Mac Quesadilla Burger is one my new favorites. It’s high in protein, obviously gluten free, and doesn’t make me feel terrible for indulging. A Big Mac Burger from McDonald’s is something I crave and really miss sometimes. Yes.. even though it’s terribly unhealthy! We tried making this burger on a gluten free bun and it just wasn’t the same. The tortilla really makes a difference and hits the spot way closer to the original Big Mac taste.
Ingredients for Gluten Free Big Mac Quesadilla Burgers
- Beef patties: 1 pound ground beef, salt, pepper, onion powder, garlic powder
- Big Mac sauce: white vinegar, mustard, smoked paprika, pepper, salt, granulated sugar, pickle relish (finely chopped pickles)
- Tortillas of choice: My favorite GF tortillas are Mission tortillas or BFree High Protein Tortillas for added protein. With this recipe I Like the Mission Tortillas best since they are closer to a regular white tortilla in my opinion.
- Toppings: shredded or chopped lettuce, diced white onion, sliced pickles, American cheese slices (you could use cheddar cheese for a healthier version but this recipe is to be more like the Big Mac)

- Big Mac Sauce: add all ingredients together, chill in refrigerator until time to assemble the quesadilla burgers.
- Burger patties: Cook the burgers on surface of choice: we used our Blackstone. Pull the burgers from the cooking surface.
- Quesadillas: Get all ingredients in containers or on a platter beside the cooking surface. Lay the tortilla flat on the cooking surface, add burger patties sliced in half and all toppings on one half of the tortilla, pull the empty half of tortilla over to make the quesadilla. Once heated through and golden , turn the quesadilla. Pull the quesadilla off the cooking surface once both sides are golden.
This recipe doesn’t take long and uses a lot of ingredients that you already have on hand. I love that it tastes so similar to the Big Mac at McDonald’s.

Gluten Free Big Mac Quesadilla Burger
Ingredients
Big Mac Sauce
- 1 cup mayo
- 1 tsp white vinegar
- 2 tsps mustard
- 1/2 tsp smoked paprika
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/2 tsp granulated sugar add more later if you want it sweeter
- 2 tbsps pickled relish
Burgers
- 1 lb ground beef
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp onion powder
- 1 tsp garlic powder
Toppings
- sliced pickles
- chopped lettuce
- diced onions
- sliced American cheese
- gluten free tortillas
Instructions
Big Mac Sauce
- In a small mixing bowl, combine 1 cup mayo, 1 tsp white vinegar, 2 tsps mustard, 1/2 tsp smoked paprika, 1/2 tsp pepper, 1/2 tsp salt, 1/2 tsp granulated sugar, 2 tbsps pickled relish. Mix together well and refrigerate.
Burger patties
- In a medium mixing bowl, combine 1 lb ground beef, 1 tsp salt, 1 tsp pepper, 1/2 tsp onion powder, 1 tsp garlic powder. Form mixture into 4 round balls.
- Place ground beef balls onto cooking surface and smash down into a patty.
- Flip burgers and pull from cooking surface when they are done to your liking. Cut burgers in half and set aside.
Building the Quesadilla Burgers
- Set all ingredients near your cooking surface, including cooked burger patties, big mac sauce, sliced pickles, chopped lettuce, diced onions, sliced American cheese, gluten free tortillas.
- Heat cooking surface on medium heat and place tortillas down flat.
- Add burger patties sliced in half, toppings, and sauce on one side of the tortilla and pull the other half over.
- Once golden and crisp, flip the tortilla over carefully so that your ingredients don't fall out.
- Pull from cooking surface and place on plate to cool. Enjoy with more Big Mac sauce to dip in!
